Watermelon Margarita: An Ode to Summer
Watermelon Margarita. Refreshing. Spiked. Delicious. The perfect way to end the long weekend. Happy Fourth Y'all!
This long weekend was all of de-cluttering our lives.. okay, may be not our lives but our apartment and pure family time. We cooked together, watched movies together and de-cluttered together. The 6 3/4 yo and the husband cleaned and re-arranged the pots in the patio and assembled our new patio furniture. All in all, a very productive long weekend!
Ingredients: (For 2, use 2 margarita glasses if you have)
- Watermelon - 1 Cup, cubed and seedless
- Lime Juice - 1 tsp, do not discard the wrung out lime slices/wedges
- Tequila - 3 ounces
- Triple Sec - 4 ounces
- Salt - 1/2 tablespoon
- Sugar - 1/2 tsp
- Lime zest - 1/4 tsp
- Ice cubes - couple of handfuls
Run the wrung out lemon wedges/slices along the rim of the margarita glasses. Tip the margarita glasses in the salt mix and turn gently till the glass rims gets coated in the salt mix. Set aside.
Add the watermelon cubes to a blender and give it a quick whir. Add a couple of squeezes of lime juice (about a teaspoon) and pour in the tequila and triple sec. Give your blender a couple of pulses till the concoction comes together.
