Mixed Berry Granola Yogurt Parfait
I have been sick since middle of last week. And whenever I am sick I crave for homemade food and my sweet-tooth flares up as well. I cooked large batches of mixed veggies & lentils and some fish with the help of the husband but was absolutely lacking the energy to bake something. So this afternoon when the 4.5 year old asked for some strawberries, I thought of making some parfait for the adults. Parfaits are so versatile - one can indulge or one can keep it healthy.
For us, it is always a fun way to eat something healthy that is delicious as well. It just looks fancier when served this way. It tastes as good all mixed up in a bowl for breakfast.

- Mix 6 tbs of yogurt, 1 tbs of honey, 1/4th tsp of vanilla essence and give it a good whisk. You can add a little more honey if you prefer it less tangy.
- In a glass, layer the yogurt mix, your favorite granola (I used coconut-chia granola) and berries of your choice. I used strawberries & blueberries.
- Voila, you are done!
