1-minute Brownie in a Mug - Mother's Day Baking

The husband plays soccer every Sunday afternoon. He's gone for about two and half hours. But today he had some other commitments post his soccer match so he wasn't supposed to return until much later. The 6.5 yo was not aware of that. Around early evening, he started getting very impatient. He got very fidgety and called his father twice. When I told him that his Baba won't be home before his bedtime, he wailed.

"But I need to bake you a cake!"

Not that I needed anymore sugar, but his cute desperation prompted me to look up a 1-minute (Microwavable) Brownie in a Mug recipe. Just a few ingredients, a whole lotta love and few minutes later we had some deliciousness on our hands. And while the brownies cooled down, I took a few photos. 

While Mug Cakes are very easy to make, they are very easy to mess up as well. You absolutely have to keep an eye on it, as depending on the wattage of the microwave, shape and size of your mug, the baking time will differ. This one can take any time between 45 seconds to 1 min 30 seconds to bake.   
   

1-minute Brownie in a Mug - Mother's Day Baking


Ingredients: (For 1 Mug Cake)

  • All Purpose Flour - 3 tbsp
  • Cocoa Powder - 3 tbsp
  • Brown Sugar (light or dark) - 3 tbsp
  • Oil - 3 tbsp 
  • Water - 3 tbsp
  • Vanilla Extract - 1/2 tsp
  • A pinch of salt
  • Chocolate Chips - 2 to 3 tsp
Whisk together the AP flour, cocoa powder, brown sugar and salt in a microwave safe mug. Mix in the oil, water and vanilla extract. Last, fold in the chocolate chips. Cook in the microwave in increments of 30 seconds till done.

Once done, let it cool down completely before serving. Add a dollop of vanilla ice-cream if you want to!
