Mango Kiwi Popsicles: Ingredient of the Month ~ An Ode to Summer
Summer vacations are officially on. We are on Day 3. So far, no casualties. But it is too soon to celebrate. A whole lot of craziness will ensue. It will be mostly fun. But there will some work. He will be starting second grade in August, after all!
I will have to keep my pantry and fridge stocked with healthy snacks. And some frozen treats to cool down the ever active 6.5 yo of mine.
We have elaborate plans for this summer. I will keep sharing if we manage to execute any. For now, enjoy the recipe.
Ingredients: (Yield about 4 to 6 popsicles)
- Mango chunks - 2 Cups, chopped
- Kiwi - 2 (chopped) + 1 sliced
- Lemonade - 1 Cup (recipe here)
- Ginger - 1/2 tsp, grated
- Honey or sugar - to taste (if the mangoes are not sweet enough, ours were awesome)
Run everything except for the kiwi slices in a blender till smooth. Fill up your popsicle molds leaving just a little room. Slide in the kiwi slices gently and secure the tops, making sure that there are no spillages.
Leave the pops in the freezer for at least 4 hours till they set. Serve, once frozen and enjoy the smiles all around.
