Buttery Garlic-y Shrimp

We have settled in..well, almost. We still need to buy 2 important things. A coffee table and a car. We hardly took time deciding on the rest of the furniture. But got stuck when we came to choosing a coffee table. Too round. Too big. Wrong color. Too expensive. Same with the car! We just cannot decide which one to buy. So while the husband did some research (yet again), I made some shrimp.
Our lunch menu today - Peas Pulao with Shrimp tossed in a buttery garlic-y sauce. Simple yet delicious. Oh, and there was some baked chicken for the son.

Ingredients:

  • Shrimp - 14, medium
  • Butter - 1 tsp
  • Oil - 1 tsp
  • Garlic - 1/2 tbs, minced
  • Cilantro - 1/2 tbs chopped
  • Lemon Zest - 1/4 tsp
  • Black Pepper - 1/4 tsp freshly ground.
  • Salt to taste

In a pan, add the oil and butter. You can do all butter. Add the minced garlic, lemon zest and chopped cilantro. Keep the heat on medium and give it a light toss. Add the shrimps, sprinkle the salt and pepper and cook till the shrimps turn pink. Make sure not to overcook  and serve warm with rice or as an appetizer. I always make it just before I want to serve it.

PS: If you like a little bit of heat, you can add some chili flakes.
